Gluten-free low carb stuffing recipe

Magic Mix from hOMe Grown Living Foods makes the best gluten-free, low carb stuffing— a side dish that everyone will love! We like to add roasted squash and mushrooms to ensure that our vegetarian guests feel nourished.

Ingredients

2 cups of Magic Mix (from hOMe Grown Living Foods)
1/2 cup water
3 tbsp butter or ghee
1 cup leeks or onions, finely chopped
2 stalks celery, finely chopped
1 cup mushrooms, sliced
1 cup squash ~ butternut or acorn, cubed & roasted (optional)
1/2 tsp garlic powder
1/2 tsp onion powder
2 tsp oregano
1 tsp sage
1 tsp each sea salt & pepper
1 cup chicken or veggie broth
2 eggs, beaten

How to make gluten and grain free stuffing

Mindful preparation

  1. Preheat oven to 350°

  2. Mix Magic Mix with water and let sit for a few minutes

  3. Scoop and shape into small balls and bake for 20-30 minutes until golden brown

  4. Spiralize or use a peeler to create ‘noodles’ from the zucchini. Toss with a pinch of salt and let drain in a colander for 15 minutes. You could do this first and let drain while baking the Neatballs.

  5. Heat oil in a skillet over medium heat. Add noodles and minced garlic. Gently toss for 3 minutes. Once softened, transfer to a larger bowl.

  6. Add pesto, nutritional yeast and combine

  7. Add neatballs and garnish with fresh tomatoes and basil
