Vegan Caesar Salad with Low Carb, Gluten Free Croutons

This amazing egg & oil free Caesar Salad with crunchy Keto Croutons is sure to be your new Go-To recipe when you want a hearty Meal in a Salad. In the mid summer with some hOMe Grown U Bake Crackers & carrot top pesto ~ this is DINNER!

Our signature Caesar is extra creamy when you add an avocado and adds beautiful texture and crunch with hOMe Grown Living Foods vegan cheeze sprinkles.

If you tolerate dairy, a light sprinkle of Parmesan cheese adds depth and a slightly salty flavour. 

Fresh, light, tasty and filling…. all the best things about dinner piled into one recipe that can be eaten as a meal or as a side dish.

Makes 2 main course salads or 4 side salads

Ingredients:

1 large head of fresh Romaine lettuce

Croutons ~ 2 -4 veggie burgers OR U Bake buns cubed and toasted 

1/2 cup vegan cheeze sprinkles

half the dressing recipe below

1 avocado - optional but HIGHLY recommended

DRESSING

Makes enough for two batches of the above salad recipe

 1 cup sprouted cashews or sprouted sunflower seeds

1/2 cup hemp hearts

2-6 cloves garlic

Juice and rind of 2 lemons

2 tsp capers

1 tsp dulse, kelp or seaweed blend

1 tsp dijon mustard

1/4 cup nutritional yeast

1/4 - 1/2 cup water

sea salt & pepper to taste

OPTIONAL

parmesan cheese

Homemade croutons make the salad!!

Mindful preparation

  1. Toast cubed Keto Veggie Burgers or Keto Buns and allow to cool

  2. Wash, dry and chop or tear lettuce

  3. Blend all dressing ingredients in your blender

  4. Coat the bottom of a large bowl with 1/4 of the dressing. The key is to use a bowl much larger than you need so that you can get every leaf with some dressing!

  5. Add lettuce and another 1/4 of dressing. Lightly massage and add more dressing if necessary. Do not overdress!!

  6. Garnish with vegan cheeze sprinkles and croutons just before serving to ensure Crunch Factor
